An acid is a chemical that releases a proton (also known as an H+ ion) when added to water. A base, on the other hand, is a chemical that releases hydroxide (also known as an OH- ion) when added to water. When you add those two ions together, you get H+ and OH-. The + and – cancel each other out, and the two H’s get added together into H2, so you get H2O – water! If you mix an acid with an equally strong base, they neutralize and turn each other into water, plus various other byproducts.

Weak acids are widely used in cooking, and include citric acid (found in oranges and limes) and acetic acid (found in vinegar). They usually have a sour or tart taste. Stronger acids may have a corrosive or disintegrating effect, such as the hydrochloric acid in your stomach, which helps you break down food. Acids and bases can be measured on the pH scale, where high pH refers to more basic chemicals, whereas low pH refers to more acidic chemicals.
